INGREDIENTS LIST

Sriracha BBQ Sauce
● 2 tablespoons avocado oil, or other flavorless oil
● 8 cloves garlic, minced
● 1 ⅓ cup ketchup
● ⅔ cup low sodium soy sauce or tamari
● ⅔ cup rice vinegar
● ⅓-⅔ cup brown sugar, sweeten to your liking
● ½ cup Sriracha
● ¼ cup vegan Worcestershire sauce
● 2 limes, juiced
● 2 tablespoons maple syrup
● 1 tablespoon onion powder
Onion Rings
● 8 cups of neutral oil for frying (or you can use your air fryer if you have one!)
● 1 large white onion, peeled and sliced into thick rings
● 1 cup of all purpose flour
● ½ cup of panko bread crumbs
● 3 TBSP of cornstarch
● Salt and pepper
● 1 ½ cups of light beer (Miller Light, Coors Light Bud Light, etc — don’t use a stout!)
Sandwiches
● Onion rings, prepared (or use 12 oz pack of frozen onion rings, prepared)
● Seeded hamburger buns
● Plant Provisions Mesquite BBQ Slices
● Arugula

DIRECTIONS

1. Make your Sriracha BBQ sauce. To a saucepan over medium heat, add avocado oil and chopped garlic. Sauté for 30 seconds, until fragrant. Lower heat to low and add ketchup, soy sauce, rice vinegar, brown sugar, sriracha, vegan Worcestershire, 2 juiced limes, maple syrup, and onion powder. Simmer for 20 minutes, stirring often until the sauce reaches your desired consistency. Remove from the heat and allow the sauce to cool to room temperature.

2. Make your onion rings. In a large, heavy-bottomed pot, heat the oil over medium heat until it’s at least 350. In a large bowl, whisk together the flour, panko, cornstarch, salt, and pepper, then pour the beer into the mixture and whisk until smooth. Using tongs, dip each onion slice into the mixture, then fry in the oil until golden. Remove from the oil and let cool on a wire rack on top of a rimmed baking sheet. Continue until all are fried, then turn the heat off under the oil. Make sure to cool the oil COMPLETELY before removing and cleaning.

3. Make your sandwiches! Toast the hamburger buns, then layer on the Sriracha BBQ sauce and the Plant Provisions Mesquite BBQ slices. Top with the onion rings and arugula, and enjoy!
