CHILI EGGPLANT ROLL
2 each – Soft roll
10 ea – Chipotle Chili plant-based deli slice
2 Tbsp – Lemon Aioli (sub recipe)
2 Tbsp – Mayo (v)
1 Tsp – Lemon juice, fresh
½ cup – Pickled Red Onion (sub recipe)
½ cup – Red onion, sliced thin
1 Tbsp – Cilantro
3 Tbsp – Lime Juice, fresh
1 Tsp - Salt
Crispy Eggplant (sub recipe)
3 Tbsp – Sunflower Oil
1 ea – Japanese eggplant, cut into 4 spears
½ tsp - Salt
½ tsp – Black pepper
Lemon aioli, prepare in a small bowl mix lemon juice and mayo.
Pickled red onions should be prepared in a medium bowl by mixing sliced red onions, cilantro, lime juice, and salt.
To prepare the crispy eggplant, heat oil in a sauté pan over medium heat. When the oil begins to smoke, place eggplant cut side down on the pan to sear. Cook on each side for 3 min and season with salt.
Assemble each sandwich start by placing 5 Chipotle Chili slices, top with 2 crispy eggplant spears, 2 Tbsp pickled red onion and drizzle with the lemon aioli.
