SMOKEHOUSE VEGAN MONTE CRISTO
• ¾ cup vegan egg, such as JUST egg
• 1 tablespoon maple syrup
• 1 teaspoon ground cinnamon
• Pinch of salt
• 4 slices of white bread
• Plant Provisions smokehouse Slices
• Stone Ground Mustard
• Fig Jam
• Vegan shredded cheese, of choice
• Vegan butter, or olive oil
In a bowl that’s large enough for the bread whisk together the vegan egg, maple syrup, cinnamon, and salt.
Spread mustard evenly over one side of a piece of bread and fig jam evenly over the other piece of bread.
On the mustard half of bread, layer on heaps of Plant Provisions Smokehouse Slices and then shredded cheese. Place the other piece of bread on top and dip both sides of the sandwich in the egg mixture.
In a skillet over medium heat, add 1 tablespoon of vegan butter or olive oil. Add the sandwich to the pan and cook approximately 2 to 3 minutes, or until the bread is golden and crispy. Flip and cook the other side until golden and crispy. Cover the pan with a lid to help the cheese melt. Repeat to make a second sandwich and enjoy!
